1/2 cup sugar
1/2 teaspoon salt
1 - 2 tsp spicy mustard (horseradish-based or brown "deli" style)
3 teaspoon red wine vinegar
1 cup oil (blend olive and other oils -- e.g. pecan, hazel -- to taste)
1/4 cup dry white wine
1/4 cup minced red onion

Place all ingredients in blender and blend.
Blend at high speed until onion is finely minced and dressing develops creamy texture. 
Add mustard to taste.

Toss into salad greens and bit of spinach, mandarin oranges and almonds.
