NUTTY WILD RICE

 

1 cup wild rice

1 cup Uncle Benís Original Rice

4 1/2 cup chicken broth

 

1 cup yellow raisins

Dry Red Wine

 

1 cup silvered almonds

4 or 5 sliced green onions

Grated rind of an orange

1/4 cup olive oil

1/3 cup orange juice

 

 

Combine wild rice and 2 cups chicken broth.

Cook 1 hour.

 

Combine original rice and 2 1/2 cups chicken broth

Cook 50 minutes.

 

Simmer raisins in wine for 1/2 hour.

 

Brown almonds slightly in toaster oven.

 

Mix all ingredients together.

Let stand about 2 hours at room temperature before serving.

 

Special Note: This recipe can be prepared the day before.
